Strawberry Lemonade Mojito Mocktail

Summer on the homestead calls for something refreshing, beautiful, and simple to whip up after a long day of DIY or chasing after Clover through the pastures. This Strawberry Lemonade Mojito Mocktail is the perfect non-alcoholic treat—bursting with seasonal berries, fresh mint, and a splash of citrus.
Whether you’re entertaining friends on the porch or sipping solo during golden hour, this drink feels like slow living in a glass.

If you have ever gardened and grown herbs you may have heard the one cardinal rule when it comes to growing mint. ALWAYS grow it in a pot. Well, not to throw shade but the previous owners of our house missed that day in gardening school.
One whole side of the house where lawn should be…. mint. I am not sure if you can actually get high off of mint, but when mowing- it sure feels like it.
Hey, at least it smells good. Needless to say, we have a never ending supply of mint.
One day after working outside all day (and yes, mowing so mint was on the brain) I wanted nothing but a mojito. However, after spending all day in the sun and heat, still with plenty of barn chores ahead of us alcohol didn’t seem wise. A mojito mocktail sounded kind of boring. I mean thats basically just water, mint and lime juice.
So I decided to get creative. Let’s mix one up, shall we?

Let’s gather our ingredients:
- 1lb of strawberries
- 1 cup of fresh squeezed lemon juice
- 1/2 sugar
- A few sprigs of mint
- Sparkling water
- Ice ( we love these giant ice cubes)

Equipment:
- Blender – This is the one I use an love. I went through several that never seemed to measure up. They either would break or didn’t have the power I wanted. This one is WELL worth the money.
- Manual Juicer – I am sure there are fancier ones but this one gets the job done.
- Not a necessity but we love sparkling water and flavoring it ourselves. It saves $$$ and we know exactly what is going into it. For those reasons and more we love having a Soda Stream on hand.

Step 1
Wash and roughly cut Strawberries

Step 2
Juice about 4-6 lemons to get 1 cup of juice

Step 3
Add strawberries, lemon juice and sugar to blender. Blend until smooth, about a minute.

Step 4
Muddle mint in the bottom of glass, add ice and sparkling water, top with strawberry lemonade concentrate and stir.

Step 5
garnish with additional mint, lemon slices and strawberries and ENJOY!

This drink is easy and SO delicious. It has become a new staple on the homestead!

I used about two mint leaves per glass. As far as home many glasses it makes it depends on on how strong you want them. I got 6 glasses out of this but if you want a strong flavor you may only get four.
